The addition of chamomile flowers and honey lends this American style wheat beer a soothing character that complements warm weather and relaxation. This brew was originally made in the summer of 2005 at Dogfish Head Brewery & Eats in Rehoboth Beach, Delaware.

INGREDIENTS

6.6 pounds (3 kg) wheat/barley liquid malt extract (75 minutes) (or 5 pounds [2.3 kg] wheat/barley dry malt extract)

6 gallons (22.7 L) water

1 pound (455 g) honey (75 minutes)

1 ounce (28 g) Vanguard hops (60 minutes)

2 ounces (55 g) whole chamomile flowers (60 minutes)

White Lab WLP320 or Wyeast 1010 or Safebrew WB-06

5 ounces (140 g) priming sugar
